I’m almost embarrassed to post this as a recipe because it’s TOO easy. My daughter is absolutely crazy about these popsicles so I went for it anyway.

When I’m in the grocery store I look for the coconut water with the least amount of added sugar. This coconut water also has peach and mango puree added in. I fill the mold until there is about an inch of empty space. Afterward, I add in any fruit that I have on hand. I’ve done both blueberries and strawberries. This time I only had frozen blueberries from The Blueberry Ranch. I pop on the lid and then let them freeze overnight.

Ingredients

Instructions
  1. Fill popsicle molds with enough coconut water to leave about an inch of space at the top.
  2. Add pieces of fruit (I typically use blueberries and strawberries)
  3. Put lids on molds and place in freezer
  4. Serve after frozen (you may have to run the mold under water for a few seconds to get the popsicle out)
