The times are few and far between where I spend A LOT of time in the kitchen cooking dinner. I work outside of the home, take Taylor to swimming and music, exercise and spend time with friends and family. Quality food is a priority, but spending hours in the kitchen is not.

This meal is quick, easy and delicious. I put 2 lbs. of beef chuck roast, a 12 oz. jar of pepperoncinis, 1 small sweet onion and spices in the crockpot and let it cook on low for 8 hrs. Next, put the beef on a delicious whole grain wheat hoagie or bun (I use these) and add a slice of provolone or mozzarella cheese. I then put the sandwich under the broiler for a minute to get the cheese nice and melted. I opted to add a bit of marinara sauce to mine afterward but totally up to you!

If you’re opting to decrease grains and dairy I’ve also eaten this plain with a sweet potato on the side. Just as delicious :).

  1. I cube the chuck roast and then add it to the crockpot.
  2. I then add the sliced onion, onion powder, garlic salt and italian seasoning.
  3. Dump the whole jar of pepperoncini into the mix and cook on low for 8 hours.
  4. Drain the beef before placing it on the hoagie or bun. Top with some chopped pepperoncini from the crockpot. Top with mozzarella or provolone cheese.
  5. Place under the broiler for 1 minute.
  6. Add any other toppings you want (I added marinara)--and enjoy

**You'll be hard pressed to find pepperoncini without artificial coloring unless you look at Whole Foods.
