These mini pizzas are healthy and very easy to make. It took me probably 10 minutes to pop these in the oven–and that was with a 2 year old helping! They only need 10 minutes to bake and then, voila, dinner/lunch/breakfast is served!

One caveat–to make these healthy, you have to use healthy ingredients.

I use Ezekiel sprouted grain english muffins, organic Muir Glen pizza sauce, organic cheese and veggies.

I also love to make these with ham and pineapple!

Instructions
  1. Preheat oven to 375
  2. Cut english muffins in 1/2 and place them on a cookie sheet
  3. Spread 1-2 T pizza sauce on each english muffin
  4. Sprinkle each english muffin with cheese
  5. Add veggie toppings
  6. Bake for 10 minutes or until edges start to brown and cheese is melted
