It’s probably no secret by now that I LOVE baked goods. I take every chance I get to “healthify” recipes or find simple recipes that are gluten and dairy free. I limit my consumption of gluten and dairy because I tend to feel better when I do. I have a finicky GI system and I am currently working with a functional medicine doc to rid myself of SIBO. I won’t get into deets because I’ve probably already shared too much :). You can google ‘SIBO’ if you are really interested.
Okay back to brownies. These are so simple it’s insane. I’ll admit, when I saw what the batter looked like I was skeptical they would turn out okay. Fast forward 20 minutes after putting them in the oven and I have a warm gooey brownie. My two year old even ate one and asked for seconds. I file that under a #momwin! She has a sweet tooth but she’s not always open to testing out my healthier recipes.
When I asked to take a picture of her eating one this is what happened. Moms of toddlers I know you feel me. That white blob in the lower left hand corner is the dog eating her crumbs.
