Fall is here! Nothing screams fall like a nice recipe involving the pumpkin flavor.  I know more and more people who have a gluten allergy or intolerance so I tried my hand at some paleo pumpkin pancakes. I will say, if you’re a die hard pancake eater–the grain free texture might throw you for a loop. It takes a bit of getting used to but once you do, you might find yourself feeling less sluggish and blah.

I made these bad boys while living with my father-in-law. It was quite the process seeing as I realized my baking powder was in a bag in my toddler’s temporary bedroom while she was still asleep. We all know you DON’T wake a sleeping 2 year old. The batter sat in the fridge for awhile until I finally had to go to the grocery store and buy some. It turns out the reason she slept in so late was because she had hand, foot and mouth disease. I don’t wish this disease on anyone and the week that followed was full of tears (hers and mine), little sleep and a lot of ice cream.

I’m happy to report that she is no longer sick and that we are living in our new house! This is our new kitchen and I am slightly obsessed with it. I’m hoping to have an influx of recipes once we are settled and have all of our kitchen gadgets and utensils unpacked!

Ingredients

Instructions
  1. In a large bowl whisk the eggs together.
  2. Add in the pumpkin puree, vanilla extract and almond milk. Mix.
  3. Add the dry ingredients and mix.
  4. Heat a skillet to medium heat. Spray with coconut oil or olive oil. Once the skillet is hot, spoon batter into skillet and spread so it is even.
  5. Let each side cook for 2-3 minutes.
  6. top with ghee or butter and pure maple syrup. Enjoy!
