Who doesn’t love a good egg salad? I like to spread mine on toasted sprouted grain bread OR use it as a dip for Simple Mills crackers.

I try to use organic hard boiled eggs, Primal Kitchen Mayo and Organic dill relish. I don’t use organic ingredients because it’s “in” nowadays, I truly believe in the benefits of eating real food that’s not laden with chemicals.

Most non-organic relish has artificial food coloring which is linked to cancer, ADHD, rashes, asthma and tumors,. Conventional mayo has high fructose corn syrup which is linked to heart disease and obesity.

This is such a versatile recipe. You can eat it as is or even swap in celery and green onion. You could also cut up your own dill pickle instead of buying pre-made relish.
